DANIEL MEAL


Great meal tonight!!!
Quinoa with snow peas and salmon!

I put 2 cups of chicken broth in a pan with one cup of quinoa and brought to a boil, placed lid on top turned to med low and cooked for 20 minutes.  While this was cooking I used 2 TBLS of butter (made with flaxseed) melted in skillet, chopped up one clove of garlic and began to sauté. I added thinly sliced snow peas to sautéing garlic.  I also added 1 TBLS spoon of gluten free soy sauce, sea salt and pepper.  After quinoa was ready and snow peas were bright green I added the snow peas to the quinoa.  Covered pan and let sit while I cooked the salmon.  I made a rub of fresh basil, garlic powder, salt and pepper.  Rubbed on salmon and placed salmon in a skillet, with 1 TBLSP melted flaxseed butter, on medium.  Squeezed the juice of one lemon of the top.  Cooked 5 minutes on each side.
